A night at Evelyn Bar & Kitchen turned into a memorable evening of incredible food, lively hospitality, and an inspiring story of Evelyn’s persistence in turning a long-held dream into reality.
Walking into the charming corner restaurant in deep FiDi, I expected good food and drinks, some conversation, and an enjoyable little night. What I got instead was a story of constant effort, persistence, and manifesting success.
Almost as soon as I sat down, I had the chance to speak with Evelyn herself. She was clearly busy, moving around the restaurant and tending to the many patrons with a huge smile on her face, but she still took a moment to stop by my table and have a word with me. I shook her hand and asked her about the story behind the restaurant’s opening, and, in a hearty Irish accent, she immediately launched into the tale. Evelyn described how she owns another restaurant just a short distance away, but she had always had her eye on this particular corner. At the time, it was occupied by a small Greek restaurant, and she would regularly walk past it, imagining what she could do with the space. She asked about purchasing it time and time again, always keeping it in the back of her mind, but it was never able to come to fruition.

Then, one day, a friend sent her a message saying that the restaurant had finally put up a “for sale” sign! Evelyn didn’t hesitate. She jumped into action and immediately bought it, turning the place she had admired for so long into Evelyn Bar & Kitchen. It had now been running for about three months, and she had finally decided to host a soft launch party for it. Hearing the story directly from Evelyn made it feel even more remarkable to me. There was something almost surreal about hearing someone describe a place they had wanted for so long, only to eventually see the opportunity appear and act on it immediately. Even more striking was learning that many of the staff from her previous restaurant had come with her to the new location, giving Evelyn Bar & Kitchen a sense of continuity rather than making it feel like she had simply started over somewhere new. Evelyn also told me that she eventually plans to work here full-time, which made the entire story feel even more personal.

Waiters swung around and presented each table with small bites of food and drinks, and it was all astounding. For my vegetarian taste buds, I was able to enjoy specialties like beetroot toast, cauliflower wings, and a mini burrata bite. I ordered a watermelon martini, and it was incredible. The area was a hub of conversation and networking, and I myself was able to talk to several influencers and media personalities who had come to attend the launch. They also had favorable opinions of the restaurant, all expressing their delight in the outstanding decor and amazing food. When the central table opened to a buffet-style platter of ricotta dip, flatbread pizza, and more burrata with toast, I knew I was in heaven.

I ordered a jalapeño margarita before the night was over and reflected on what I had learned that day. What started as a simple night out had turned into something much more memorable: a chance to experience a restaurant in its earliest days, meet the woman behind it, and hear the story of how years of persistence eventually turned a long-held dream into reality. Between the warm atmosphere, endless food and drinks, lively conversations, and Evelyn’s infectious energy, it was clear that Evelyn Bar & Kitchen was more than just a new restaurant—it was the culmination of years of hard work and a place she had genuinely wanted to create. By the time I finished the last several sips of my margarita, I left feeling full in more ways than one, with a great meal behind me and a story of determination that I was genuinely glad to have heard.
