This sake is transcendent and blows other sake brands out of the water
On September 21, 2023, the sake brand Dassai announced the opening of their new U.S. based brewery located in Hyde Park, NY. Not only will this brewery make some of the best sake in New York, but it will also serve as a tasting space for guests and lovers of sake to try some of their new bottles. Alongside the brewery announcement, Dassai unveiled their latest sake bottle, Dassai Blue. And to celebrate this momentous occasion for the Dassai brand, a feast was thrown at the new Brewery location in Hyde Park where guests were able to try out the new Dassai Blue sake and pair it with delicious Japanese inspired bites.
Dassai Sake is a premium Junmai Daiginko sake made with Yamada Nishiki rice. Dassai Sake follows traditional Japanese sake making processes while using state of the art machinery brought in from across the globe. The thing that separates Dassai Blue from the original Dassai sake is that this new sake will be made using New York water and combining it with the traditional Yamada Nishiki rice. The combination of the two symbolizes the merging of two cultures to create an ultra-premium sake creation that is so vibrant, juicy, and sweet.
At the event, guests were able to take a tour of the brewery, looking at the machinery used to make sake and how it fits in to the overall sake making process. Guests were also treated to glasses of the new Dassai Blue expression, expertly crafted hand rolls prepared by professional sushi chefs, a caviar pairing, and an outdoor feast featuring Japanese inspired bites. At the very end of the event, some of the people behind the making of Dassai Blue came onto the stage to perform a traditional Japanese barrel breaking ceremony to celebrate the launch of the new brewery and bottle.
The Dassai Blue Sake Brewery is located at 5 St Andrew Rd, Hyde Park, NY 12538 (2 hours north of Manhattan via car or Amtrak). It will be open Thursdays and Fridays from 1pm-4pm starting October 19th for small group tours and tastings by reservation only through the company’s website, www.dassai.com. Dassai Blue will start distributing in New York State on Monday, September 25th.
