The stage was on fire with high-energy performances from the likes of Luh Tyler, Real Boston Richey, Danny Towers, Wizz Havinn, Loe Shimmy, C-Stunna, Icandy, and Lil Crix. Red Wine Hot Chocolate

  • 1 part Josh Cellars Cabernet Sauvignon
  • 1 part semisweet chocolate chips
  • 1 part milk of choice
  • Vanilla extract and sea salt to taste
  • Marshmallow and cocoa powder

Combine in a saucepan over low heat. Once the chips are melted, remove pan from heat. Stir in vanilla extract and a pinch of sea salt. Top with frothed milk and marshmallow. Garnish with sprinkle of coca powder. 

Autumn Sangria

  • 1 part apple
  • 1 part orange
  • 1 part lime
  • 1 part cinnamon or cinnamon sticks
  • 1 splash of apple cider
  • 1 bottle Josh Cellars Red Blend
  • 1 part sweetener to taste
  • Ice

Combine all ingredients in a large pitcher. Let set for 1-3 hours. Serve and garnish with cinnamon stick and apple slices.

Apple Cider Mimosa 

  • 1.5 oz bourbon
  • 3 oz apple cider
  • .5 oz honey
  • Josh Cellars Prosecco

Shake all ingredients and strain into a coup with graham cracker rim. Top with Josh Cellars Prosecco.

Cranberry Holiday Spritz 

  • 1 part Josh Cellars Pinot Grigio
  • .5 part lemon Juice
  • .75 part cranberry spiced simple syrup (simple syrup with cranberries and cinnamon)
  • Top with ginger beer
  • Sugar covered cranberries to garnish
  • Ice

Combine all but the ginger beer in a shaker. Shake and strain into a rocks class or a tall glass and top with ginger beer. Garnish with the cranberries.

French 24 

  • 1 Oz Tequila
  • ¾ pomegranate juice
  • 2 oz grapefruit soda
  • Top with Josh Cellars Rose Prosecco 

Combine tequila, pomegranate juice and grapefruit soda in a glass. Top off with Josh Cellars Rose Prosecco.

The Beach and Whispering Angel: Stellar Rosé Picks for the Occasion

When it comes to selecting the perfect rosé for your summer escapades, two bottles stand out as true stars – The Beach and Whispering Angel. Recipes: 

Tamarind-Lime Vinaigrette with Mezcal Union

Servings: 4 to 6

  1. 1 tbsp tamarind pulp
  2. 1 ½ tbsp hot water
  3. 1 lime, zest and juice
  4. 2 tsp sugar
  5. 2 pinches of salt
  6. 1 pinch of ground chile flake
  7. 2 tsp Mezcal UNIÓN Uno
  8. 3 tbsp vegetable oil

 

In a bowl, melt the tamarind paste with the hot water, whisking to combine. Add in the lime zest and juice, sugar, salt, chile and whisk to combine. Add in the vegetable oil, whisking to combine.

Mezcal UNIÓN Hoja Santa 

1 oz Mezcal UNIÓN Uno

0.5 oz Riesling Wine infused with tarragon 

1 oz green tomato juice

Instructions: Add all ingredients to a shaker. Add ice and shake. Double strain over a glass with ice. Use hoja santa as a garnish. Enjoy!

 

Garnish: Fake Hoja Santa

Rim: Hoja Santa Sugar 

Glassware: Old-Fashioned

Ice (for shake): Cube 

Ice (for serve): Big Cube

 

Barbacoa Lamb Marinade with Mezcal Union

Servings: 4 to 6

  1. 4 tbsp Mezcal UNIÓN Uno
  2. 3 tbsp kosher salt
  3. 8 lbs of goat meat, leg and shoulder, bone-in
  4. 4 garlic cloves
  5. 1 small white onion, chopped
  6. 4 dry chile de arbol, de-seeded
  7. 2 chile morita, de-seeded
  8. 4 chile guajillo, de-seeded
  9. 1 tbsp dried oregano
  10. 3 dried bay leaves
  11. 2 tsp ground allspice
  12. 2 tsp ground black pepper
  13. 1 tsp ground cumin
  14. ½ cup white vinegar
  15. ½ cup water

First, mix the mezcal with the salt to make a paste. Rub this paste all over the goat meat and let sit for an hour or so. Meanwhile, toast the garlic, onion and the dry chiles in a dry saucepan until fragrant. Separately, in a pan, toast the allspice, black pepper, bay leaf and the cumin until fragrant. Combine all remaining ingredients (besides the marinating goat) together in a blender until smooth and homogenous. Massage this paste into the goat and let it sit overnight, covered for 8 to 24 hours. When ready to cook, place the marinated goat in a roasting pan with 4 cups of water, cover tightly with aluminum foil and roast in a 300F oven for 4 hours.

Mezcal UNIÓN Coriander Paloma 

1.5 oz Mezcal UNIÓN Uno

1 oz Coriander Cordial

1 bottle grapefruit soda (Squirt or Jarritos)

Instructions: Rim a glass with coriander salt. Add all ingredients to glass. Add ice and stir. Use pineapple slices as garnish. Enjoy!

Garnish: Pineapple Slice

Rim: Coriander Salt

Glassware: Highball

Ice: Cube

The Knockturnal was fortunate to interview Contraluz’s National Ambassador, Camila Ruiz.

THE KNOCKTURNAL: WHY A MEZCAL COMPANY:

Camila Ruiz: I like that mezcal seems to have a magical, spiritual quality. A spirit that needs an ingredient that’s so connected to the land. The complex flavor it produces. With every sip, you really do taste tradition and history.

THE KNOCKTURNAL: WHAT INSPIRED YOU TO WORK WITH CONTRALUZ CRISTALINO MEZCAL?

Camila Ruiz: There are subcategories in spirits that are just trends that come and go. But I had a feeling this subcategory “Cristalino category” was going to be an innovation that made sense as Agave’s next step and I think it’s interesting to drink something aged, but with a clear, light, silky texture.

THE KNOCKTURNAL: WHAT MAKES YOUR MEZCAL DIFFERENT FROM OTHER BRANDS?

Camila Ruiz: The fact that we are the very first Cristalino mezcal with a balanced, approachable and layered complexity makes us extremely unique.

THE KNOCKTURNAL: WHAT IS YOUR FAVORITE MEZCAL COCKTAIL?

Camila Ruiz: That’s very hard for me to answer. It really depends on the night, the season, and also how much sugar I’ve had that day, lol. I like Contraluz Margaritas just as much as a simple Contraluz soda. 

THE KNOCKTURNAL: Are there any new exciting projects/news you can tell us about?

Camila Ruiz: As innovators and pioneers, we’re always working on something different, can’t share much, but something exciting is coming from our Casa Lumbre portfolio for 2023!

THE KNOCKTURNAL: ANY ADVICE THAT YOU WOULD GIVE TO SOMEONE STARTING THEIR OWN ALCOHOL BRAND?

Camila Ruiz: Be authentic. Be respectful of the history and people of the spirit you choose. Be sustainable.
