Award-winning mixologist Lynnette Marrero unveiled her new cocktail menu at The Roof at PUBLIC New York, featuring aperitif-inspired drinks, tropical flavors, and elevated zero-proof options.
Guests gathered at The Roof at PUBLIC New York for an exclusive first look at the venue’s refreshed cocktail menu, created by award-winning mixologist and Speed Rack co-founder Lynnette Marrero. Set against panoramic views of the Manhattan skyline, the tasting offered attendees an opportunity to sample Marrero’s latest creations while learning more about the inspiration behind the new beverage program.

Known for helping shape New York City’s modern cocktail movement, Marrero approached the rooftop menu with a clear vision in mind. During the event, she described The Roof as a “beautiful lofted rooftop garden” above the Lower East Side and explained that she wanted the cocktails to give New Yorkers a brief escape from the city’s fast pace through bright, fresh flavors and aperitif-inspired drinks.
That philosophy was evident throughout the menu. Guests were invited to sample signature cocktails including Dolce Far Niente, Sweetest Taboo, Rain or Shine, Henny Thing is Possible, and Piña Conada, alongside frozen offerings and a thoughtful selection of zero-proof cocktails.

Among the standout pours was Rain or Shine, a refreshing combination of Beefeater Gin, Giffard Rhubarb, Dolin Blanc, yuzu juice, and berry notes that balanced tart and sweet flavors. Dolce Far Niente offered a lighter, spritz-style experience featuring gin, jasmine-infused vermouth, Cocchi Americano, and prosecco, while Sweetest Taboo delivered a more nuanced profile through a blend of Absolut Elyx, Italicus, Lustau Fino Sherry, and citrus.
Marrero also spoke about the growing importance of non-alcoholic cocktails in hospitality. As consumer demand continues to evolve, she emphasized that guests who choose not to drink alcohol still expect the same level of craftsmanship and sophistication found in traditional cocktail programs. The menu’s zero-proof selections were designed with that mindset, pairing functional spirits with fresh ingredients to create drinks that feel elevated rather than simply alcohol-free.

When asked which cocktail best reflects her style today, Marrero pointed to the menu’s tropical influences, citing both her Puerto Rican heritage and the energy of summer in New York City. Whether through frozen cocktails, bright aperitifs, or modern zero-proof options, the new menu successfully captures that spirit while offering something for every type of guest.
