Award winning and internationally known Japanese restaurant, Sbe’s Katsuya has launched a new cocktail menu created by world renowned mixologist and newly appointed Director of Beverage Program and Development, Gui Jaroschy.
The Knockturnal was invited to an exclusive intimate preview of the new menu which features cocktails made with fresh ingredients, efficient methods, and libations that are not only aesthetically pleasing but also a refreshing burst of flavor. Jaroschy’s culinary approach to cocktails are evident in his carefully crafted drinks including the Sakai Spritz, Thai Tea Sazerac, Sencha Highball, Citron Cloud Sour and Shishito Gimlet.
The intimate preview took place at the sleek and lavish Katsuya Brentwood in Los Angeles, CA. A select number of guests came out to explore the new menu while also dining on the inventive cuisine. The first drink was the Sakai Spritz which Jaroschy considers to be “great for after work” due to it’s refreshing nature. The rejuvenating drink is a combination of Bombay sapphire gin, mizu ‘lemongrass’ shochu and grapefruit rice soda. While based in Miami, the bartending professional was inspired by a seasonal Korean beer which is typically a Summer spritz. The spritz was so replenishing and light, it was easy to forget that there is actually alcohol in it. However, the Thai Tea Sazerac, which includes Thai tea infused TINCUP Colorado Whiskey, Peychaud’s bitters and absinthe has quite the kick to it. Served in a shot glass sized portion, this drink is best sipped slowly while you allow the zesty flavors to roll over your tongue . We then moved on to the Shishito Gimlet, Sencha Highball and lastly the Citron Cloud Sour, which was a combination of Stoli Vanil, citron honey tea, fresh lemon and basil making it the perfect “after dinner drink.” Each drink was uniquely crafted and offered a special flavor that you cannot find at your typical bar. The mix of fresh ingredients and how they were paired was truly exquisite and an experience in itself.
Jaroschy’s updated menu will be available at all thirteen Katsuya locations around the world however the cocktail guru will oversee beverage programs across more than 175 Sbe properties globally.
