An Innovative Sushi Kitchen Concept hits Time Out Market New York

Bubusan, the newest brainchild of hospitality company Plan-Do-See and the “edgy little brother” of renowned Omakase restaurant Azabu, is the latest vendor to hit the halls of Time Out Market in DUMBO.

We had the chance to sample Bubusan’s sushi offerings on Wednesday night, and learn about how this innovative new restaurant came to be. Bubusan originated in Miami during the pandemic as a delivery / takeout-only spot, intending to serve Omakase at a lower price point but to still offer the superb quality known and expected by Azabu patrons. This “ghost kitchen” concept proved wildly successful, and graduated to Time Out Market Miami where Bubusan enjoyed even more popularity. Offering a la carte Omakase options such as Supah Sensi, Tiger Style, and Sticky Greenz (vegan), Bubusan has packages for everyone to enjoy. 

We loved their classic favorites like spicy tuna rolls and tuna nigiri, as well as their creamy crab rolls and signature “magic pizzas” – pies topped with sliced raw fish and drizzled with flavor-packed sauces like spicy mayo and truffle oil. Bubusan was “born out of a love for experimentation” to create dishes “unlike anything you’ve ever seen or eaten before,” and they definitely hit the target straight on with their pizzas. From their beautifully designed takeout boxes to mouthwatering sushi creations, Bubusan’s clearly set to be a hit in the New York market, and you can find them on social media @eatlikebubu.

Time Out Market, with locations all over the country and a flagship in Lisbon, aims to gather the best home-grown chefs from every city, and New York’s location in DUMBO houses many local favorites such as Jacob’s Pickles and Ess-A-Bagel. Bubusan is the perfect new staple for Time Out New York, and we can’t wait for you to try it – we loved our experience with them, and are counting down the days til we can go back.
