LOLITA and Corazón Cabo Bring a Taste of Baja California Sur to New York

LOLITA welcomed the flavors of Baja California Sur to New York for a one-night culinary collaboration with Corazón Cabo Resort & Spa, bringing Chefs JC Colón and Eric de Maeyer together for a tasting experience complemented by agave-driven cocktail pairings from Beverage Director Marshall Minaya.

Held Oct. 14 as a final celebration of Hispanic Heritage Month, the evening brought two distinct culinary perspectives into the same Midtown kitchen. Rather than recreating either restaurant’s standard menu, Colón and de Maeyer used a series of passed bites to explore the connection between contemporary Mexican cooking in New York and the coastal influences of Baja California Sur.

De Maeyer worked alongside the LOLITA team throughout the evening, finishing dishes from the kitchen before they moved into the dining room. Among the selections were César Bites from Corazón Cabo and LOLITA’s Campechana Tostada, alongside an assortment of seafood-forward small plates that reflected the event’s “Cabo San Lucas meets New York City” premise.

Presented together, the menu made the collaboration easy to understand visually: dishes from both kitchens shared the same table rather than arriving as two separate tasting experiences. That sense of exchange became one of the evening’s defining elements, allowing guests to move between the chefs’ individual approaches while experiencing the menu as a single progression.

Behind the bar, Minaya extended that conversation through cocktails created specifically for the food. Drawing from LOLITA’s agave-focused beverage program and selection of additive-free tequilas, the pairings were designed to complement each round rather than function as a separate attraction. Minaya prepared the drinks throughout the evening while guests moved between bites, cocktails and conversations with the culinary team.

The format also kept the dinner notably interactive. Instead of disappearing behind the kitchen doors once service began, the chefs circulated through the room and spoke directly with diners about the dishes and the collaboration.

For Corazón Cabo, the event offered a New York audience a glimpse of the resort’s culinary identity without requiring a trip to Baja California Sur. For LOLITA, it provided an opportunity to stretch beyond its regular menu while remaining rooted in the agave, Mexican flavors and convivial atmosphere that define the Midtown restaurant.

The result was less about reproducing Cabo in Manhattan than creating a meeting point between the two. For one evening, Colón, de Maeyer and Minaya used food, spirits and hospitality to show how regional influences can travel while still retaining a clear sense of place.
