During a recent trip to New York City guests of Perrier-Jouët got to witness her dynamic qualities during an intimate evening hosted at the landmark restaurant Eleven Madison.
Perpetuating the elegant quality of the house while at the divine affair, Frerson spoke on her work that is done with refined passion. Her mission is usher in a new era of sophisticated and blissful drinking at Maison Perrier-Jouët and it is a goal that she is accomplishing well.
Eleven Madison pairings of Spring Onion Broth with leak, Ginger Tart Flambe with spring peas and mint, and Crispy Chickpea Panisse with Meyer Lemon, dill and chive aioli were served as Frerson spoke on her indispensable knowledge of the history of the brand and what makes Perrier-Jouët uniquely special.
The continuation with the first course of Marinated White Asparagus was paired with the lovely Belle Epoque 2013. A legendary and iconic bottle full of delicate floral style, it is made from a blend of 50% grand cru Chardonnay, 45% grand cru Pinot Noir and 5% Meunier. The floral and fruit elegance was especially noted by Frerson for the standout qualities.
The excellence of the house was only expressed even more richly as guests dined on an entrée of Fava Bean Falafel with mushrooms, leeks, and sesame paired with the Belle Epoque 1995. This rare and elegant champagne known to celebrate the art of vintage brought great honor to the Perrier-Jouët vineyard.
Dessert of was then served of Strawberry & Cherry Blossom paired with Perrier-Jouët Blason Rosé. A sweet, yet daring taste, one sip and you are transformed to a summer escape in your mind. Your senses awaken with delight.
Every note of the meal with the loving guidance of the cellar master was a joyous melody. The song produced on this grand night at Eleven Madison was not just superbly powerful. It ignited a memorable moment for the history books.
