On a seemingly uneventful Tuesday night, the corner where KΕbo resides is alive with a diverse congregationβyuppies and bohemians alikeβall lured by tantalizing gastronomic offerings. The restaurant’s interior, awash in warm, dim lighting and adorned with wood paneling, creates an inviting ambiance. A carefully curated playlist of 80s tunes fills the air, setting the stage for an experience that is both nostalgic and contemporary. The 35-seat pink Brazilian quartzite bar, a visual spectacle in its own right, adds a touch of elegance to the space, beckoning patrons to unwind and savor the moment.
Chef Rodriguez, at the helm of the Nai Restaurant Group, seamlessly intertwines Spanish roots with Italian inspirations and Mediterranean nuances on KΕbo’s menu. At age 11, Ruben moved from Spain to the U.S. and worked his way up through numerous New York City kitchens before founding his first restaurant, Nai, in 2010. For Rubenβs fourth concept, KΕbo, he combines his travels throughout the Mediterranean, leaning into his Spanish roots and his love of Italian and other regional flavors to bring a finely curated experience.
