 Chicken Salad French Toast

Ingredients:

2 slices of brioche
1 egg, 1 cup milk
1 crushed garlic clove
¼ cup grated parmesan
Salt/pepper
1 sprig chopped thyme
Nutmeg
1 tbl dijon mustard
All the leftover chicken scrapped from the carcass
1 tbl mayo
1 tbl cream
¼ cup shredded sharp cheddar
2 tomato slices
4 thin green squash slices
4 tbl butter

First, mix the egg, milk, crushed garlic clove, parmesan, chopped thyme, nutmeg, dijon, salt and pepper in a deep dish. Next, place the two slices of brioche and press lightly so that it absorbs as much as the custard as possible, then flip and repeat on the other side. Mix together the chicken, cheddar, mayo, cream, and reserve. In a large frying pan, place 2 tbl of butter and cook until melted and slightly brown, place the 2 slices of brioche. Cook brioche on medium heat until golden brown, flip and cook the other side. Then Place one brioche slice on a small cookie sheet, 4 thin green squash slices, the chicken mixture, two slices of tomato and cover with the other slice. Lastly, place in a 350 degrees oven until the cheddar has melted and starts oozing on the sides.

Serve hot to yourself or a group of girlfriends gabbing away and toasting to a new year.
