Celebrate Valentine’s Day With The GlenDronach And Sweets

The perfect Rye Blondie and Rob Roy as an easy combo to make your special someone

Valentine’s Day has finally arrived.  And we know for some this day might be stressful, especially if you are sharing the day with your special someone.  But, for those that need some inspiration, there is nothing that is more romantic than a freshly baked dessert served alongside a craft cocktail.  And we have an amazing recipe from our friends at The Glendronach.  Recently, the brand has partnered up with the award-winning bakery Ovenly to create a perfect dessert and drink combo.   From Ovenly, they have created a delicious Rye Blondie recipe which is specially created to pair with the Rob Roy, a Manhattan variation featuring the flagship The GlenDronach 12.  And we can attest from our recent walkthrough with Ovenly and The Glendronach that this recipe is so simple and comes out so delicious and decadent.

For the Rye Blondie, the ingredients you’ll need are:

  • ½ cup (or up to ¾ cup) GlenDronach 12 Year
  • 2 teaspoons bitters
  • 1 cup dried cherries, chopped
  • 1 cup chocolate wafers
  • 1 cup rye (medium) flour (may substitute all-purpose flour)
  • 1 cup all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cloves
  • 1 ½ tablespoons nigella seed
  • 1 cup unsalted butter
  • 2 cups (packed) light brown sugar
  • 2 eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • Flaky salt, for topping

As for instructions you can follow these steps:

  1. Heat the scotch and bitters in a saucepan until a sow boil and pour oer your cherries. Let these soak for at least an hour.
  2. Preheat oven to 350 and butter and lightly flour a 9×13 baking pan.
  3. Strain the liquid from the cherries and set the liquid aside.
  4. Melt butter in a saucepan and let it cool.
  5. In a medium bowl, whisk together the dry ingredients.
  6. Pour the melted butter into a large bowl and add in the brown sugar. Whisk until combined.
  7. Add eggs, vanilla, and scotch mixture to this bowl.
  8. Add in the flour mixture to the butter mixture and combine using a spatula. Add in the cherries to the mixture as well.
  9. Spread mixture on the prepared pan and sprinkle sea salt on top.
  10. Bake at 350 F for 35 minutes.

And for the accompanying Rob Roy recipe you should have the following:

  • Ingredients:
    • 1 oz The GlenDronach Original Aged 12 Years
    • 1/2 oz Sweet Vermouth
    • 1 dash Angostura Bitters
    • Garnish: Filthy Black Cherry
  • Method: Combine all ingredients in a mixing glass with ice.  Stir until very cold and strain until chilled coupe.  Garnish with a filthy black cherry.
