Juan Carlos Santana, Beverage Director at Noble 33, has showcased a phenomenal display of sophistication. Each sip the visitor experiences captivates the magic of his passion and mission to create the perfect cocktail. He has taken great pride in this new cocktail menu that’s all his own – putting his stamp on the NYC cocktail scene with creative cocktails that heavily lean into the restaurant’s Mediterranean fare (think: Greek yogurt, truffle oil, dill, zhoug, and pistachio).
The Commandaria
A “sommelier with a bartending problem,” as he jokingly likes to say, JC is a certified sommelier who is behind the menus and bars of notable restaurants, including Miami’s two-Michelin-starred L’Atelier de Joel Robuchon and one-Michelin-starred Le Jardinier. Now, as the Beverage Director for Noble 33’s global portfolio, he brings with him accolades from Star Chefs as a Rising Star Sommelier, a Michelin Exceptional Cocktails Award, and Awards of Excellence from Wine Spectator for nearly every program he’s touched.

Be sure to check out favorites for the season, such as: Midnight in Marmaris with Grey Goose Vodka, Giffard lichi-li, lemon, sumac, Turkish tea, and honey; Velvet Venom with Flecha azul reposado tequila, ume, pomegranate, lime, vanilla demerara, and egg white; and the See You in Santorini with Gran Centenario plata tequila, coconut infused aperol,masitha, passion fruit, agave, and lime. Also, not to be missed are some shaken delights of the Noble Margarita with Gran Centenario plata tequila, salers gentiane, zhoug, lime, and agave; as well as the Kavala Crush with Yen Raki, Ten to One rum, centum herbus, and pistachio, coconut, pineapple, and lime.
Originally born in San Juan, Puerto Rico, JC Santana moved to Miami at an early age. After attending Florida International University, where he studied Hospitality Management, Santana worked his way up through the beverage industry and became a certified sommelier, CMS, and a certified sake advisor at the Sake School of Americas.
Following this influential experience, he took on the role of Corporate Director of Beverage for the Bastion Collection (L’Atelier de Joel Robuchon Miami/NY, Le Jardinier Miami/NY/Houston, Benno NY, La Table Houston). Over his career, Santana has earned recognition by the Michelin Guide for its “Exceptional Cocktails Award” in 2022, and he was also recognized by StarChefs as a Rising Star in the Best Sommelier category in 2021. Santana has also achieved Wine Spectator’s noteworthy “Best of Award of Excellence” and “Award of Excellence.”
