On Monday, March 16th, a special collaboration is taking place between Chelsea’s Hello Hello and Williamsburg’s Boro Brine. This one-night-only event bridges the gap between Manhattan and Brooklyn, bringing together two of the city’s most innovative beverage programs. Hello Hello, a neighborhood staple known for its seamless transition from sunlit café to lush, vibey bar, will join forces with Boro Brine, a dual-concept seafood destination that balances a lively a la carte experience with an intimate, elevated tasting counter.
This evening brings together Hello Hello’s Luis Hernandez (previously Seamstress NYC, Ume Plum Liqueur) and Boro Brine’s Omar Bautista (previously Crown Shy, Torrisi) for a menu inspired by the natural progression of day into night, with each venue shaping one half of the experience. At this event, Hello Hello, known for its daytime café roots and house-distilled coffee liqueur, will represent the day—with cocktails that are bright and refreshing. As the evening progresses, Boro Brine will take over the night, with deeper, more spirit-forward cocktails that mirror its moodier, late-night Williamsburg energy. And throughout the night, a live DJ will spin throughout the evening as well to keep the night rolling with fun vibes.
