Blu Livingston restaurant officially opened its doors on May 1, and after getting a look inside before opening night, it’s easy to see why there’s already so much buzz.

Blu Livingston restaurant leans just as much into its atmosphere as it does the food. As the second location from Blu Hospitality Group, it brings the same fine-dining feel from Weehawken while carving out its own space in Livingston. The restaurant sits at 277 Eisenhower Parkway in the Shoppes at Livingston and sets the tone right away—elevated, but not overdone.

Owner Michael Giannopolous leads the vision, alongside Directors of Operations Andrew Christianson and Karla Khambatta. Together, they shape a space that feels polished but still easy to settle into.

The menu centers on seafood and elevated small plates. It focuses on fresh ingredients and clean presentation. It’s the kind of place where you share dishes, try different flavors, and let the night build naturally.

Chef Ortega leads the kitchen with a style that blends Mediterranean influence and subtle global touches. The menu feels elevated but still approachable. One standout for me was the spicy tuna rice cake topped with wasabi. It had the right balance of heat and texture and easily became my favorite dish of the night.

At the bar, Jeremy LeBlanche puts together cocktails that focus on both flavor and presentation. Adam Greer handles the wine selection, curating bottles that complement the menu. The “Don’t Be Shy” cocktail stood out right away. It mixes Tito’s vodka, Provence rosé, Aperol, strawberry soju, and lemon. The result is light, slightly citrusy, and not too sweet—refined but still fun.

The energy really defined the night. Live entertainment moved through the space naturally and added to the experience without taking over. The room stayed lively but controlled, which is not easy to pull off around an opening.
