Miami’s Design District welcomed a bold new culinary chapter as world-renowned Italian chef Massimo Bottura brings his only U.S.-based restaurant, Torno Subito, to The Moore, Miami’s landmark destination for art, design, and culture.

I had the opportunity to experience Torno Subito firsthand during an intimate dinner hosted by Chef Massimo Bottura and Chef Bernardo Paladini, which offered a revealing glimpse into the restaurant’s soul. Alongside fellow Miami-based media, we gathered for a seven-course tasting menu, each dish paired with a thoughtfully selected range of wines. The evening unfolded as a shared journey, with conversations flowing as freely as the pairings. Between courses, we shared personal stories as laughter filled the room, creating an atmosphere that embodied the heart of Italian culture—communal, unhurried, and deeply human.
Under Chef Paladini’s leadership, supported by the creative vision of WoodHouse founder Brady Wood and President of Clubs and Hotels Simon Sorpresi, Torno Subito thrives on contrast—fast and slow, old and new, tradition and reinvention. Each dish honors Italian heritage while reimagining it through Bottura’s distinctive and playful lens.
The interiors heighten the experience even further. Drawing inspiration from the glamour of 1960s La Dolce Vita, the space blends bright pastels, bold design elements, and whimsical details. Italian Riviera elegance collides with Miami’s vibrant energy, creating an atmosphere that feels celebratory, immersive, and effortlessly chic.
As The Moore’s public-facing restaurant, Torno Subito serves bar, lunch, dinner, and brunch, anchoring the destination’s creative energy with a culinary centerpiece. More than a restaurant, it represents a thoughtful collaboration between gastronomy, art, and design—one that mirrors Miami’s evolving cultural landscape.
