Greenpoint’s Palm Springs Bar, ‘The Springs’ Features New Menu From Fornino

As if Palm Springs was in the middle of Little Italy

Last Tuesday, it was officially announced that the Greenpoint cocktail bar The Springs, will now exclusively serve food from their neighbor Fornino.  The Springs is known for their fun cocktail, warm interior décor, and lively ambiance.  As soon as you walk in, you immediately take in how spacious, yet inviting it is.  The design and the menu for The Springs takes inspiration from Palm Springs around the 1950s and with the spacious indoor and outdoor patio, it serves as the perfect place for after work drinks or a fun night out with your friends. The cocktail menu here boasts a huge variety, mixing a variety of liquors and pairings that create fun and interesting flavor combinations with each sip.  The common denominator for all of these drinks that ties it all together is that they are made subtly strong.

And with this new partnership with Fornino, The Springs now brings a variety of Italian dishes into the mix which will pair phenomenally with any of the drinks offered.  The Fornino menu at The Springs features Eggplant Parmesan, Anna Rosé’s Meatballs, Arancini, and Fried Smashed Potatoes.  Salads include the Chopped, Arugula, Kale, and Caesar. The pizza offerings include the Marinara with tomato, oregano, garlic and olive oil; and the Margherita Classica, topped with tomato, mozzarella, basil, olive oil and parmesan.  Additional pizza options include the Genovese, Monzese, Pugliese, Calabrese, Salsiccia Di Pollo, Tre-Carni, and the famous Al Roker, made with sopressata picante, fontina, caramelized onion, roast pepper, tomato, mozzarella and rosemary. Any pizza can be made gluten-free.


As far as the drinks we liked, we enjoyed the Neon Palm which was made with Spring 44 Gin, Grapefruit Cordial, Lillet Rose, Lemon, and Absinthe.  If you love a good gin drink, then we highly recommend this drink for you.  It is a bit on the drier side, but evens out with a nice crispness.  There is a good hint of citrus with this drink which adds a nice lightness to balance out the dryness from the gin.  Although this drink is strong on paper, you really can’t taste the liquor in the way that hurts, which is always appreciated.  Another drink that we recommends is the Zombie Blood.  This drink is made with Spring 44 Gin, Blue Curacao, Passion Fruit Cordial, and topped with a Black Sugar Rim.  This drink was more on the sweeter side of drinks, but not overly sweet where it makes your teeth hurt. The dryness from the gin is balanced out with the passion fruit cordial which gives a light kiss of sweetness to it.  And if that isn’t enough sweetness for you, then the black sugar rim is always there to enhance the sweetness of the drink which really gives a nice refreshing taste to it.

All in all, we highly recommend coming to The Springs not only to try their new menu from Fornino, but to also try one of their many fun and interesting drinks.  The vibe of this place is perfect, from the drinks and food all the way to their choice of music.  We will definitely be making more trips to Greenpoint to hang out here.
