Atkins Spring High Tea Showcases Healthy Lifestyle Delights

This week in New York City Atkins hosted a high tea experience to showcase their amazing line of treats and delights.

Over a gorgeous table at Bobo in the West Village, guests dined on dishes from the Atkins portfolio. The menu was full of scrumptious dishes like Pumpkin & Ham Quiche, Turkey Sausage Sauté, Low Carb Blueberry Dessert Bars and Easy Million Dollar Bites.

The highlight of the Low Carb London Fog Cocktail with the new Atkins Black Tea Latte Protein Shake. Sips were enjoyed as the Vice President of Nutrition and Education at Simply Good shared nutritional tips.

Pumpkin & Ham Quiche

DIRECTIONS

  • 1 medium (2-1/2″ diameter) Onions
  • 2 tablespoons Unsalted Butter Stick
  • 4 large Eggs
  • 1/2 cup Heavy Cream
  • 1 cup, mashed Cooked Pumpkin
  • 1/2 cup Ham (Whole, Cured, Roasted)
  • 1 tablespoon Parsley
  • 1 cup shredded Gruyere Cheese
  1. Preheat oven to 350°F. Prepare a pie plate with oil. Set aside.
  2. In a small skillet saute diced onion in butter until soft; about 6 minutes.
  3. In a large bowl whisk together the eggs and cream. Add the pumpkin, diced ham, sauteed onion, chopped parsley and cheese. Season with salt and freshly ground black pepper (about 1/4 tsp each) and the cayenne pepper (optional).
  4. Pour into prepared pie plate and bake for 30-35 minutes until puffed and set in the center. Transfer to a wire rack to cool. Enjoy warm or cold.
